Every Thursday this September, Borough Market is heating things up with a series of South Asian spice demonstrations, from 1-2.30pm in its Market Hall.

The chefs showing off their skills include last year’s Masterchef winner Saliha Mahmood Ahmed, who will demonstrate dishes from a different region of the Indian subcontinent. Award winning author, food historian and food writer Monisha Bharadwaj, who started her cookery school Cooking With Monisha in West London in 2004. Asma Khan who runs Darjeeling Express, a restaurant entirely run by women and who has been named one of the 100 most influential women in hospitality.

6th September: Award winning author, food historian and food writer Monisha Bharadwaj started her cookery school Cooking With Monisha in West London in 2004. Today it attracts not only the home cook, but also chefs who wish to learn Chef Monisha’s brand of simple authentic Indian cooking. For this demonstration she will be cooking flavours of South India, including salmon moilee, chicken chettinad and ginger raita.

13th September: Born and raised in Karachi Sumayya Usmani is an internationally published food writer, author and cookery teacher, who is recognised by BBC Good Food as the UK’s ‘go-to’ expert for Pakistani cuisine. Based in Glasgow and London, Sumayya is passionate about the rich culinary heritage of Pakistan, and her writing and teaching are devoted to sharing those distinct flavours and exploring the cultures and traditions that have influenced them.

20th September: When Asma Khan moved to the UK in 1991, she didn’t know how to boil an egg. Two years later, she travelled back to her ancestral kitchens and, over time, learned recipes that had been in her family for four generations. Asma started Darjeeling Express as a supper club run out of her home in 2012 and it is now recognised as one of the top Indian restaurants in London. The restaurant is entirely run by women from South Asian who were not professionally trained and Asma has been named one of the 100 most influential women in UK hospitality. This session will see Asma demonstrate Royal Mughlai dishes.

27th September: 2017 MasterChef winner Saliha Mahmood Ahmed impressed the judges with her Indo-Persian style of cooking and has been heavily influenced by the Kashmiri cooking of her maternal grandmother and mother. Her debut cookbook, published in September, combines inspiration from India’s rich culinary heritage and Saliha’s own travels in modern day India and Pakistan. The Kashmiri recipes she brings to this demo kitchen are designed to inspire 21st century food lovers.
